Anniversary Dinner

 

Tonight me and my hubby are going out to celebrate our third wedding anniversary. It’s not technically the day (actual anniversary is August 26th) but when Grandma offers to babysit, you take advantage of it!  I’m wearing a blue Diane Kennedy t-shirt, black jeans from Winners, and a Very Valero necklace.

These jeans were such a steal!  I found them for $11 at Winner’s but they had these awful big, blingy rhinestones on all the pockets and buttons.  I took them to my dry cleaner who also does alterations and she ripped them all off and added just one big black button.  The alterations cost $10 but it was worth it because I love the fit of these jeans.

I actually started dating my husband when I was 15 years old and in grade 10!  It’s freaky but true.  We grew up as neighbours on the same street in a small B.C. town and I was totally obsessed with him right from the start.

Tonight we are baby free and have some gift certificates to The Keg which have been patiently waiting to be used.  Nom nom nom doesn’t steak taste even better when you aren’t paying for it?

Homemade Pizza

Who loves pizza?!?!  Well now you can love it even more because I am going to give you a fool proof dough recipe that you probably have all the ingredients for already.  Horray!  Cheap, homemade pizza!

The dough:

– 2.5 teaspoons active dry yeast
– 1 teaspoon white sugar
– 1 cup warm water
– 2.5 cups all purpose flour
– 2 tablespoons olive oil
– 1 teaspoon salt
* minced garlic
* dried rosemary

In a small bowl add 1 cup warm water, the salt, and the yeast.  Stir that up and let it hang out for 10-15 minutes.
In the meantime, in another bowl, combine the flour, olive oil, salt and any additions of your choice (I used minced garlic and dried rosemary).
Mix everything in both bowls together until you’ve got a nice little ball. Cover with saran wrap and cover. Let it rise for 5 minutes or however long you want.
Roll that baby out and pile it with whatever toppings you like.  I used tomato sauce, mortadella, spicy salami, mozzarella, parmesan and then added fresh tomatoes and arugula too.  I love arugula on pretty much anything.  Spinach is soooo last season.
Bake at 450 degrees F (230 degrees C) for 15 – 20 minutes.
Voila!

Nom nom nom crab cakes

I got these killer crab cakes in my S.P.U.D delivery this week. They are from Daily Catch in Vancouver and they were tasty, tasty, tasty!! I’m not usually someone who has a lot of pre-prepared food in the house. But…I am pretty sure I’ll be ordering these again. They took practically no time to cook and made for a pretty gourmet lunch.

Salmon!

Last night for dinner I made one of my favourite meals!  Candied and smoked salmon on baguette with cream cheese, capers and red onion.  It was delicious!! Homemade Dog Food

Stella is my family’s Miniature Schnauzer X Poodle.  She’s only three years old but she’s been sick off and on for her entire life.  I don’t even want to know how much I have spent on veterinary bills!!

This past Easter we were at my in-laws place and Stella urinated blood on their carpet! I was so freaked out.  I rushed her to the vet and she had a series of tests, X-rays, and ultimately a surgery on her bladder to remove struvite crystals and stones.  A thousand dollars or so later…Stella was finally recovering but we were told she would have to be on a special food (Urinary SO) for the rest of her life.  This didn’t sit well with me.  I didn’t believe that the food was meeting her nutritional needs.

I battled with many vets.  All of them said no to homemade dog food.  (I do believe they were trying to help but I don’t know how much they learn about actual dog nutrition in school).  Anyhow, after hours and hours of research I thought – fuck it – I’m going for it.  Today, Stella has been on homemade dog food for almost 2 months and she is doing great!

Give me the stick Dad!!

She hasn’t had any fur discolouration (which she always got on her paws and ears), or infections of any kind.  I also regularly test her urine with pH strips just to be sure.

Vancouver Chinatown Festival, Golden Dumpling Cook Off & Dumpling Derby 2014

This past weekend some of our family and friends went downtown for the 2014 Vancouver Chinatown Festival, Golden Dumpling Cook Off & Dumpling Derby.  It was so much fun.  My husband and I got the “dumpling passports” which allowed us to sample twenty different dumplings from a variety of Vancouver restaurants.  There were Asian, Italian, Mexican and even Indian inspired dumplings.

I even got to meet Chef Vikram from Vij’s (a popular Vancouver Indian restaurant).

My husband, Adam, was a trooper and also tried to compete in the dumpling derby (a 2 minute all you can eat dumpling competition).  Needless to say, he didn’t win.  His strategy of prepping for the competition by sampling 20 dumplings prior didn’t really pay off. Haha!  However, he still looked awfully cute in his dumpling bib.IMG_0654-0.JPG

Galette for Leftovers

I made another galette for dinner the other night.  It was inspired by Smitten Kitchen’s burst tomato, corn and zucchini galette.  I followed the recipe and threw in all our leftovers from last night’s dinner too!  Two boneless skinless chicken thighs, asparagus and onion.  It was really good and kind of tasted like chicken pot pie.

Tomato, Corn and Zucchini Galette

I know what you’re thinking… “Another galette?”

You’re right, I’m completely obsessed.  But they are so easy to make and pastry makes me like vegetables, so sue me.

Just look at that beauty!  Deb at Smitten Kitchen has so many recipes that are to die for.

Plus, my mother-in-law dropped off a big bag of homegrown cherry tomatoes and some local corn.  A woman at the farmer’s market gave me three free zucchinis too so I mean…it is kind of meant to be.

BBQ Bruschetta

Tonight for dinner my hubby and I made bruschetta on the BBQ. First time we’ve ever tried that! It turned out great and we only burned a few pieces of baguette.

Instead of mozzarella we used this delicious cheese called Hot Jill from Little Qualicum Cheeseworks that we got from the farmer’s market this morning.
