Tomato, Corn and Zucchini Galette

I know what you’re thinking… “Another galette?”

You’re right, I’m completely obsessed.  But they are so easy to make and pastry makes me like vegetables, so sue me.


Just look at that beauty!  Deb at Smitten Kitchen has so many recipes that are to die for.

Plus, my mother-in-law dropped off a big bag of homegrown cherry tomatoes and some local corn.  A woman at the farmer’s market gave me three free zucchinis too so I mean…it is kind of meant to be.

BBQ Bruschetta

Tonight for dinner my hubby and I made bruschetta on the BBQ. First time we’ve ever tried that! It turned out great and we only burned a few pieces of baguette.



Instead of mozzarella we used this delicious cheese called Hot Jill from Little Qualicum Cheeseworks that we got from the farmer’s market this morning.

Jello Shots!

These babies are awesome for a few reasons.  Number 1. Way easier to eat this way than out of your usual dixi cup.  Number 2.  They are soooo cute! 🙂

Just cut your oranges in half, scoop out the fruit, mix up the jello and add liquor of choice, and pour it into the hollowed halves to set. Once set, slice them up.

  • Salt, for rimming the glass (not optional in my opinion)
  • Ice
  • 1 1/2 ounces tequila
  • 1 ounce freshly squeezed lime juice
  • 1/2 ounce Cointreau (not Triple Sec)
  • Club soda

Cider, cider, cider!

I never used to be a cider drinker but I am trying to like beer and thought cider would be a good gateway beverage. 🙂 I’ve really come to like Ward’s Picker’s Hut cider which is made right here in B.C. (in Kelowna).  It has definitely become my summer go to beverage.

I used to really like Somersby Cider but I stopped drinking it because it became too sweet for me.  However, last weekend when my husband and I were on the Island our very clever waitress (Annie at Bard & Banker in Victoria, B.C.) suggested adding a shot of Jameson whisky to it.  Brilliant!  It was so tasty and made it taste dryer.  Somersby and Jameson should totally do some sort of cross promotion marketing (and I want a cut – I’m sure Annie does too).

Dinner Time!

When it’s hot out I prefer to cook outside or just make something easy and simple.  I also hate throwing out food.  So tonight was one of those nights I threw together dinner with what I had on hand.

Mmmm greek salad, raspberries, cashews and couscous.

Don’t forget wine.

Blueberries are plentiful right now!  We’ve been eating so many!  My baby girl is practically addicted to these sweet little treats.

Last night I whipped up an easy blueberry galette.  I made a few changes from this initial recipe (less sugar, more blueberries, yogurt instead of ricotta).  It was a big family hit and I’ll be making it again soon.

Red Fish Blue Fish

My husband and I went to Victoria last weekend to visit my sister, friends and to see The Original Wailers.  It was an awesome weekend!

And after years of waiting I finally ate at Red Fish Blue Fish.  It was so delicious! If you are ever in Victoria …YOU NEED TO GO HERE!!  There is practically always a line up but certainly worth the wait.

We feaster on grilled oyster tacos, ahi tuna tacos, seafood jerk poutine and halibut fish and chips!  This was a glorious meal!  My husband and I decided that it is now a mandatory stop anytime we are in Victoria.  Yummm yumm!

Canada Day & Strawberry Cake

I’ve been away from my blog for far too long!  But I have excuses…my little girl Audrey is keeping me plenty busy.  She’s 9 months old now and seriously going to walk any time.  I’ve also been taking on a lot more writing projects.  Regardless…I’ve still been eating plenty of delicious food!

On Canada Day we went to my cousin and her boyfriend’s house just off Commercial Drive in Vancouver.  It was a gorgeous day!  It was a potluck and I wanted to bring something Canada Day themed so after scouring my favourite food blog, Smitten Kitchen, for ideas I made a delicious Strawberry Cake. Yumm!
