Mmmmmm risotto! I love the stuff. When it’s done well it’s incredible. When it’s done poorly it fills my heart with sadness.
The first time I cooked risotto I was so nervous. The recipe sounded complicated and tedious. It is a labour of love but definitely not as daunting as you may think. Just warm some stock and slowly add it to arborio rice. I’ve tried loads of combinations…kale and mushroom, peas and parmesan … hell, I even made a bacon risotto.
I don’t recommend making this when it’s hot out. Unless you are able to cook outdoors. You’ll be stirring this for quite sometime. But Fall is just around the corner!!
