I’m Back!

I’ve neglected my blog for TOO LONG! But I really do have a good excuse… I had another baby! Eleanor is now 1 and Audrey is 2.5 and I finally feel like I have my feet back under me.

This last year we have been getting by on the basics. With two tiny children trying new foods for the first time (one who only now has 6 teeth) I like to keep it simple. We’ve mostly been eating scrambled eggs, yogurt, fruit smoothies, toast, roast chicken, salad, rice and avocados…lots of avocados! I don’t remember making anything that was blog worth. I was generally impressed with myself just for getting out of bed and adulting everyday.

My kids don’t like spicy foods (yet). Audrey does keep dipping her little fingers in sriracha and then bravely licking it off. Moments later I usually find her guzzling down some milk. But I 100% appreciate that kind of commitment to trying something new. Plus, since the menu has been so bland & boring I was really excited to make some homemade kimchi & kraut [see next post for details/recipe].

Anniversary Dinner

 

Tonight me and my hubby are going out to celebrate our third wedding anniversary. It’s not technically the day (actual anniversary is August 26th) but when Grandma offers to babysit, you take advantage of it!  I’m wearing a blue Diane Kennedy t-shirt, black jeans from Winners, and a Very Valero necklace.

These jeans were such a steal!  I found them for $11 at Winner’s but they had these awful big, blingy rhinestones on all the pockets and buttons.  I took them to my dry cleaner who also does alterations and she ripped them all off and added just one big black button.  The alterations cost $10 but it was worth it because I love the fit of these jeans.

I actually started dating my husband when I was 15 years old and in grade 10!  It’s freaky but true.  We grew up as neighbours on the same street in a small B.C. town and I was totally obsessed with him right from the start.

Tonight we are baby free and have some gift certificates to The Keg which have been patiently waiting to be used.  Nom nom nom doesn’t steak taste even better when you aren’t paying for it?

Homemade Pizza

Who loves pizza?!?!  Well now you can love it even more because I am going to give you a fool proof dough recipe that you probably have all the ingredients for already.  Horray!  Cheap, homemade pizza!

The dough:

– 2.5 teaspoons active dry yeast
– 1 teaspoon white sugar
– 1 cup warm water
– 2.5 cups all purpose flour
– 2 tablespoons olive oil
– 1 teaspoon salt
* minced garlic
* dried rosemary

In a small bowl add 1 cup warm water, the salt, and the yeast.  Stir that up and let it hang out for 10-15 minutes.
In the meantime, in another bowl, combine the flour, olive oil, salt and any additions of your choice (I used minced garlic and dried rosemary).
Mix everything in both bowls together until you’ve got a nice little ball. Cover with saran wrap and cover. Let it rise for 5 minutes or however long you want.
Roll that baby out and pile it with whatever toppings you like.  I used tomato sauce, mortadella, spicy salami, mozzarella, parmesan and then added fresh tomatoes and arugula too.  I love arugula on pretty much anything.  Spinach is soooo last season.
Bake at 450 degrees F (230 degrees C) for 15 – 20 minutes.
Voila!

Homemade Dog Food

Stella is my family’s Miniature Schnauzer X Poodle.  She’s only three years old but she’s been sick off and on for her entire life.  I don’t even want to know how much I have spent on veterinary bills!!

This past Easter we were at my in-laws place and Stella urinated blood on their carpet! I was so freaked out.  I rushed her to the vet and she had a series of tests, X-rays, and ultimately a surgery on her bladder to remove struvite crystals and stones.  A thousand dollars or so later…Stella was finally recovering but we were told she would have to be on a special food (Urinary SO) for the rest of her life.  This didn’t sit well with me.  I didn’t believe that the food was meeting her nutritional needs.

I battled with many vets.  All of them said no to homemade dog food.  (I do believe they were trying to help but I don’t know how much they learn about actual dog nutrition in school).  Anyhow, after hours and hours of research I thought – fuck it – I’m going for it.  Today, Stella has been on homemade dog food for almost 2 months and she is doing great!

She hasn’t had any fur discolouration (which she always got on her paws and ears), or infections of any kind.  I also regularly test her urine with pH strips just to be sure.

Tomato, Corn and Zucchini Galette

I know what you’re thinking… “Another galette?”

You’re right, I’m completely obsessed.  But they are so easy to make and pastry makes me like vegetables, so sue me.

Just look at that beauty!  Deb at Smitten Kitchen has so many recipes that are to die for.

Plus, my mother-in-law dropped off a big bag of homegrown cherry tomatoes and some local corn.  A woman at the farmer’s market gave me three free zucchinis too so I mean…it is kind of meant to be.

Canada Day & Strawberry Cake

I’ve been away from my blog for far too long!  But I have excuses…my little girl Audrey is keeping me plenty busy.  She’s 9 months old now and seriously going to walk any time.  I’ve also been taking on a lot more writing projects.  Regardless…I’ve still been eating plenty of delicious food!

On Canada Day we went to my cousin and her boyfriend’s house just off Commercial Drive in Vancouver.  It was a gorgeous day!  It was a potluck and I wanted to bring something Canada Day themed so after scouring my favourite food blog, Smitten Kitchen, for ideas I made a delicious Strawberry Cake. Yumm!

Seafood Extravaganza

The lobster, crab, clams, mussels, and spot prawns were all amazing.  In B.C. spot prawns are in season right now and so freaking delicious.  We cooked everything in sautéed onions, fennel, garlic, a few dried chillies and in a generous amount of butter and white wine.  Amazing!

We all had a lot of fun cooking outside.  I definitely recommend this to those who are tiered of the regular burger and bratwurst BBQ scene.  (Though…burgers and brats are pretty damn delicious too!)

I also made a pitcher of mojitos (seen drinking below).  I just threw in a bunch of mint from my garden, a few teaspoons of white sugar, white rum, lemon juice (LIMES ARE TOO FUCKING EXPENSIVE!!),  and soda water. Easy peasy!  Drink your hearts out.

FINALLY!

Today is the day!  I AM SO FUCKING EXCITED!!! My best friend, Sherina, and her boyfriend, Aaron, are coming over and we are going to have an EPIC lobster/crab/shell fish lunch.  I am a huge seafood slut.  Yaaaa  I said it.  But seriously… I don’t understand people who don’t like seafood and frankly, I don’t want to.

My father’s side of the family are French.  My maiden name is Laporte…”the door”.  (I’ve probably heard all the jokes but give it a shot! Haha.)  Anyways, I had always dreamed of going to France and after I married my now husband, Adam, he took me there for our honeymoon. It was incredible!  I loved it!  I practically ate any and all seafood in sight.  It’s true what they say…the key to great cooking is BUTTER!  I plan to put this lesson into use today.

Brunch

Today my husband grabbed our baby girl & Schnoodle pup and headed East.  They visited my husband’s parents while I stayed back and enjoyed a day off.  I had my best friend and sister over for brunch.  I just got a waffle iron and was so excited to try it!

Yummm.  Mimosas didn’t hurt either.
